Ingredients:
1-tablespoon olive oil
2 cloves garlic, minced
1 tablespoon fresh thyme
1/4 teaspoon ground black pepper
Pinch of crushed red-pepper flakes
1 pound medium shrimp, peeled and de-veined
1/4 cup white wine
1 sweet red pepper, julienne
2 scallions, thinly sliced
1 cup orange segments
1 cup sliced red figs
salt and cracked black pepper to taste
Cooking Instructions:
Take a large bowl, combine the olive oil, minced garlic, fresh thyme, black pepper and pepper flakes. Add the shrimp and toss to coat. Heat a large no-stick frying pan over medium-high heat until hot. Add the shrimp and sauté for 5 minutes, or until the shrimp are lightly browned. Remove the shrimp with a slotted spoon. Allow the juices from the shrimp to reduce until the pan is almost dry and add the white wine. Scrape the pan with a wooden spoon to loosen and browned shrimp pieces. Add the red peppers and scallions. Sauté for 5 minutes, or until the peppers are tender. Stir in the oranges and figs. Return the shrimp to the pan and reheat briefly.
