Pork chops with onions and apples

Ingredients:
2 teaspoons olive oil
4 pork loin chops, about 4 to 6 ounces each
salt to taste
freshly ground black pepper
1 medium yellow onion,sliced
4 or 5 sprigs of fresh thyme
1 tablespoon chopped fresh oragano
1/4 teaspoon crushed red pepper
3 tart apples (granny smith), cored and sliced
1 cup apple juice or cider

Cooking Instructions:
Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper and sear them on both sides until just cooked through, about 4 to 6 minutes per side. Transfer the pork chops to a platter and keep warm. In the same pan, add the onion and thyme and turn the heat to high,season with salt and pepper and cook about 3-4 minutes until the onions are golden brown. Remove the onions to the platter the chops are on, add the apple cider and scrape the bottom of the pan to loosen any of the browned bits. Add the sliced apple and cook until they are tender and the cider has thickened slightly. About 6 minutes. Add the thyme, oragano and crushed red pepper. Serve the pork chops topped with the apple-onion mixture.
