Ingredients:
8 ounces low fat ricotta cheese
1 clove of garlic minced
zest of 1 lemon
pinch salt
pinch red pepper flakes
6 small pita breads, sprayed with a small amount of cooking spray
4 - 6 ounces cold smoked salmon
1 small red onion sliced
1 tablespoon capers
1 sprig of dill
1 lemon cut into wedges
Cooking Instructions:
Pre-heat the oven or grill to 350 degrees.
Mix the ricotta cheese, garlic, lemon zest, salt and red pepper, stir until smooth and creamy. Spray the small pitas with a small amount of cooking spray. Spread the ricotta mixture on the pita breads leaving a clean border around the edges. Sprinkle with the capers and top with the smoked salmon and red onions. Place in the oven or grill for 10-15 minutes or until the edges are crispy and brown. Top with sprigs of dill and lemon wedges.
